There is, however, a great opportunity for existing restaurants to greatly expand their catering services without putting extra stress on their restaurant kitchen, by expanding through the use of food trucks.   1. I think it’s great that the food truck industry is growing. It is definitely a great service that they are offering. I am excited to see the different types of cuisines offered by some of these trucks.
